1 cup ketchup
1/3 cup brown sugar
¼ cup red wine vinegar
2 ½ cups cherries, pitted
¾ cup Cherry Coke
2 tsp soy sauce
1 tsp BBQ rub (use your go to rub for grilling)
¼ tsp black pepper
2 medium ribeye steaks

½ large seedless watermelon, sliced thick and rind removed
1 large cucumber, diced
½ red onion, diced
2 tbsp honey
2 tbsp Olive oil
½ lime, juiced
½ cup crumbled feta

- 1 cup ketchup
- 1/3 cup brown sugar
- ¼ cup red wine vinegar
- 2 ½ cups cherries, pitted
- ¾ cup Cherry Coke
- 2 tsp soy sauce
- 1 tsp BBQ rub (use your go to rub for grilling)
- ¼ tsp black pepper
- 2 medium rib eye steaks

Grilled Watermelon Salad
- ½ large seedless watermelon, sliced thick and rind removed
- 1 large cucumber, diced
- ½ red onion, diced
- 2 tbsp honey
- 2 tbsp Olive oil
- ½ lime, juiced
- ½ cup crumbled feta
- Pinch of salt and pepper
Directions:
- Preheat your grill to medium heat.
- In a small pot, combine ketchup, brown sugar, red wine vinegar, 2 cups of the cherries, cherry coke, and soy sauce.
- Over medium heat, bring sauce to a simmer and then simmer for about 30 minutes, stirring often.
- Cut your watermelon into 1-inch-thick slices. Gently pat dry with paper towel to reduce moisture.
- Sprinkle with a dash of salt and pepper and drizzle with olive oil.
- Place watermelon slices onto your grill and grill for 2-3 minutes per side, until grill marks appear. The watermelon will soften but should hold it’s shape.
- Remove from grill and set aside to cool.
- Prep your steaks by cutting into small cubes. Season with salt and pepper and your favourite BBQ rub.
- Thread your steak bites onto skewers, adding a cherry in between every 2nd steak bite.
- Repeat until all the steak and cherries have been skewered.
- Lightly drizzle with olive oil and place on grill.
- Gril for about 3 minutes per side to sear.
- Brush BBQ sauce over steak skewers and rotate to coat all sides with sauce.
- Grill until fully cooked through to desired readiness.
- Brush lightly with more sauce before serving.
- Once watermelon has cooled, dice into cubes.
- Dice cucumber and red onion.
- In a large bowl, combine grilled watermelon, cucumbers and red onion.
- Drizzle with honey and olive oil. Juice with ½ a lime and sprinkle with a pinch of salt and pepper.
- Toss to combine fully.
- Top with crumbled feta and serve with steak kebabs.
