2 Western Canadian Beef Rib Eye Grilling Steaks
1 tbsp neutral oil (canola or avocado)
2 tbsp butter
2 cloves garlic, lightly smashed
1–2 sprigs fresh thyme or rosemary (optional)
Freshly cracked black pepper (optional)
Directions
  1. Prepare the Steaks Remove steaks from the fridge 20–30 minutes before cooking. Pat dry thoroughly and season generously on both sides with salt and pepper.

  2. Heat the Pan Place a heavy skillet (cast iron preferred) over medium-high heat. Add oil and heat until shimmering.

  3. Sear Add steaks to the hot pan and sear 3–4 minutes per side, without moving, until a deep golden crust forms.

  4. Butter Baste Reduce heat to medium. Add butter, garlic, and herbs to the pan. Tilt the pan slightly and spoon the melted butter over the steaks for 30–60 seconds.

  5. Rest Transfer steaks to a plate and rest 5 minutes before slicing or serving.
