Ingredients
2 small sweet potatoes, diced
2 tbsp. olive oil
1 lb ground beef
1 (24g) taco seasoning packet
1 cup plain Greek yogurt, divided into 4 servings
2 ripe peaches, diced
1 cup grape tomatoes, quartered
1 Jalapeno, seeded & diced
Cilantro, torn to taste
¼ small red onion, diced
1 lime, juiced
Salt & black pepper to taste
2 avocadoes, diced

Ingredients

  • 2 small sweet potatoes, diced 
  • 2 tbsp. olive oil
  • 1 lb ground beef 
  • 1 (24g) taco seasoning packet 
  • 1 cup plain Greek yogurt, divided into 4 servings 
  • Tomato & peach salsa 
    • 2 ripe peaches, diced
    • 1 cup grape tomatoes, quartered  
    • 1 Jalapeno, seeded & diced 
    • Cilantro, torn to taste
    • ¼ small red onion, diced
    • 1 lime, juiced
    • Salt & black pepper to taste
  • 2 avocadoes, diced 

 

Directions

  1. Peel and dice sweet potatoes into 1-inch cubes. Add to a bowl and season with olive oil, salt and black pepper. Using clean hands, toss to coat evenly. Add seasoned sweet potatoes to a large sheet pan, and bake on 400 for 40 minutes or until fork tender 

  2. Prepare the peach and tomato salsa by adding peach, tomato, jalapeno, cilantro and the juice of 1 lime to a bowl. Season with salt and black pepper to taste. Mix and set aside for later

  3. To a heated fry pan, add ground beef. Once brown, drain excess fat and add taco seasoning, mix to combine. Add a few tablespoons of water to prevent sticking and a dried-out texture. When done, remove from heat 

  4. Build bowls by layering sweet potato followed by seasoned ground beef, Greek yogurt, peach & tomato salsa, avocado, and fresh cilantro. Mix and enjoy!
