Grilled Avocado Chicken Pasta Salad

1 package Western Family Penne Rigate
2 Boneless Skinless Chicken Breast
2 Avocado, pitted and chopped
1/4 tsp each salt and pepper
1 cup Cherry Tomatoes, halved
4 Green Onions, sliced
1/4 cup Cilantro Leaves
1/4 cup Lime Juice
1 Shallot, minced
1 Clove Garlic, minced
1/2 tsp Western Family Cumin
1/2 tsp Salt
1/4 tsp Pepper
1/4 cup Western Family Extra Virgin Olive Oil
Directions
- 1. Cook pasta according to package directions. Rinse with cold water and drain. Place in large bowl.
- Meanwhile, preheat grill to medium. Sprinkle chicken with salt and pepper. Grill for 6 to 8 minutes per side, until juices run clear. Let rest. Chop into bite size pieces.
- Grill avocado for 4 to 5 minutes until warm and lightly charred. Peel and dice.
- Prepare Cumin Lime Dressing: Whisk lime juice, shallot, garlic, salt, pepper and olive oil together.
- Toss pasta with chicken, avocado, cherry tomatoes, green onions. Toss with Cumin Lime Dressing. Top with cilantro leaves.
