Heather’s Banana Loaf

Ingredients
1/2 cup (125 mL) Western Family Butter
1 cup (250 mL) Granulated Sugar
2 Western Family Large Eggs
1 tsp (5 mL) Western Family Vanilla Extract
1 tsp (5 mL) Baking Soda
4 tsp (20 mL) Boiling Water
1 cup (250 mL) mashed ripe bananas
2 cups (500 mL) Western Family All Purpose Flour
2 tsp (10 mL) Western Family Baking Powder
1/2 tsp (2 mL) Salt
1 cup (250 mL) Western Family Walnuts Halves & Pieces
Directions
- Preheat Oven to 350ºF (180ºC).
- Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Stir in vanilla.
- Mix baking soda in boiling water and stir into mashed bananas.
- In a separate bowl, stir together flour, baking powder and salt.
- Stir into butter mixture alternately with the banana mixture.
- Stir in walnuts.
- Spoon into greased loaf pan or line with parchement paper
Bake for 50-60 minutes or until a cake tester inserted in the middle comes out clean. Let cool in the pan on a rack for 5 minutes. Remove loaf from pan and cool completely on a rack. Will keep for 3 days or 2 weeks in the freezer.
