


Tomato, Mango & Mozzarella Salad with Lemon Basil Vinaigrette
I don't know if you're like me, but in the summertime, I'm always on the lookout for simple, light recipes for lunch or to accompany my grilled meats. Tomato salads are my ultimate go to. Quebec tomatoes are so good! Always accompanied by my Montellier, I even used it to make a vinaigrette!

Tomato, Mango & Mozzarella Salad with Lemon Basil Vinaigrette

2 tomatoes, cut into ½-inch slices
½ mango, cut into strips
1 ball fresh mozzarella cheese, sliced or torn into pieces
12 fresh basil leaves
Salt and pepper to taste
½ cup Montellier lemon sparkling water
¼ cup mayonnaise
1 tbsp pesto, homemade or store-bought
1 tsp Dijon mustard
Directions
- Pour all vinaigrette ingredients into a Mason jar. Shake vigorously and refrigerate.
- Place tomato slices and mango pieces on a serving plate. Add a few spoonfuls of vinaigrette.
- Add mozzarella pieces and basil leaves. Add a little vinaigrette, season and serve.
