Air Fryer Whole Chicken for Weekly Meal Prep

Whole fryer chicken, twin pack
4 tbsp olive oil
Smoked paprika
Garlic powder
Dried rosemary
8 to 12 flour tortillas
1 packet WF fajita seasoning
1 each, medium green, red and orange bell peppers cut into strips
1 medium red onion, cut into strips
(Toppings) Avocado
(Toppings) Salsa
(Toppings) Shredded cheese
1 ½ cups shredded mozzarella cheese
1 cup shredded lettuce
Bacon bits
¼ to ½ cup WF ranch dressing
WF cheese and garlic croutons
Directions
Preheat your air fryer
- Preheat your air fryer to 360 degrees F. This will allow for even cooking.
- Prep the chicken. Wash and pat dry whole chicken with paper towels. Don’t skip this step, it will help with the crispy skin.
- Rub olive oil over the chicken, then season generously with salt, paprika, garlic and rosemary.
- Carefully place the seasoned chickens, breast side down into your air fryer basket, if you have room for both, or cook one chicken at a time.
- Cook for 35 minutes, then flip the chicken over so it’s breast side up and cook for an additional 25 to 30 minutes or until the internal temperature reaches 165 degrees F.
- Let rest before carving. Once rested, carve up or shred for fajita and ranch wrap meal prep.
Let’s prep for our fajitas.
- Slice up your bell peppers and onions.
- In a large pan, heat olive oil and sauté your veggies with fajita seasoning until tender.
- Remove from pan and divide into containers along with your shredded chicken.
- In separate containers divide toppings for fajita meal prep.
- When ready to serve, heat up chicken and veggies and fill tortillas, add your favourite toppings like avocado, shredded cheese or salsa.
For wrap meal prep.
- In tortillas (4 to 6), place a layer of shredded lettuce, shredded cheese, shredded chicken croutons and bacon bits.
- Drizzle ranch dressing over top and roll tortillas tightly to enclose the filling.
- Place wraps in a pan and fry lightly until they are crispy and golden.
- Let cool and then wrap each tortilla in parchment paper to store for the week.
