Apple Bacon Cheddar Mini Loaf Breakfast Sandwiches

Ingredients

  • 4 Apple Bacon Cheddar Mini Loaves (see recipe)
  • 3 tbsp (45 mL) Dijonnaise
  • 4 slices tomato
  • 1 cup (250 mL) Western Family Organics Organic Baby Arugula
  • 2 tsp (10 mL) Western Family Butter
  • 4 Western Family Eggs
  • 1/4 tsp (1 mL) each salt and pepper
  • Western Family Cayenne Hot sauce (optional)

Directions

  1. Slice mini loaves in half horizontally; if desired toast in toaster oven or under the broiler. Place two halves on a plate. Spread the bottom half of each loaf with 2 tsp Dijonnaise. Place arugula and tomato slices on top.
  2. Melt butter in a large non-stick skillet set over medium-high heat. Add eggs, and fry for 2 to 3 minutes for sunny side up eggs or to preferred doneness. Sprinkle with salt and pepper. Place one egg onto each loaf. Top with hot sauce, if desired. Put top on sandwich.

Tips:

  • To make Dijonnaise, mix equal parts Dijon mustard and mayonnaise. 
  • For a portable breakfast sandwich replace fried eggs with scrambled eggs.
