Apple Bacon Cheddar Mini Loaves

Ingredients

  • 2 tbsp (30 mL) Western Family Butter
  • 2 red apples, peeled, cored and diced
  • 6 slices Western Family Bacon
  • 2 green onions, thinly sliced
  • 2 cups (500 mL) Robin Hood® Original All Purpose Flour
  • 1/4 cup (60 mL) granulated sugar
  • 4 tsp (20 mL) Western Family Baking Powder
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) baking soda
  • 1-1/4 cups (300 mL) buttermilk
  • 1/4 cup (60 mL) Crisco® Vegetable Oil
  • 2 Western Family Eggs
  • 1 tsp (5 mL) Western Family Dijon Mustard
  • 1/4 tsp (1 mL) Western Family Cayenne Hot Sauce
  • 1-1/2 cups (375 mL) Western Family Old Cheddar Cheese, shredded and divided

Directions

  1. Preheat oven to 375°F. Grease a mini loaf pan; set aside.
  2. Melt butter in a large skillet set over medium heat. Cook apple for 5 minutes or until tender-crisp and browned. Set aside. Add bacon to the same skillet and cook until crisp. Drain on paper towel; cool and crumble. Set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, salt and baking soda. In separate bowl, whisk together buttermilk, vegetable oil, eggs, mustard and hot sauce.
  4. Mix wet ingredients into dry ingredients just until moistened. Fold in reserved apple, crumbled bacon, green onion and 3/4 cup cheese.
  5. Spoon into prepared loaf pan. Sprinkle with remaining cheese. Bake for 20 to 25 minutes or until tester inserted into centre of loaf comes out clean.
  6. Let cool, in pan, for 10 minutes. Transfer to a wire rack to cool completely.

Tips: 

  • Switch up the cheese and use a Swiss cheese such as Gruyere or Emmental.
  • Omit the bacon to make these loaves vegetarian-friendly.
  • Add a chopped chipotle chili to add heat and bring out the smoky flavour. 
  • Get the kids involved by giving them kid-friendly tasks such as mixing batter
  • If desired, bake this batter in a muffin tin lined with paper-liners, for 20 to 25 minutes or until a tester comes out clean when inserted into the center.
