Ingredients
1/2 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground coriander
1/2 tsp dried thyme leaves
Salt & pepper to taste
1 pound boneless, skinless chicken thighs
2 tbsp butter
1 tbsp dark brown sugar
2 cups apple slices, no need to peel
1/3 cup shallots, chopped
1/3 cup Western Family spiced apple cider
Optional: Fresh thyme for garnish
Directions
  1. Mix cinnamon, nutmeg, coriander, thyme leaves, salt, and pepper in a small bowl. Rub the spice mixture over both sides of the chicken thighs.
  2. Add a drizzle of oil to a medium-sized pan and turn on medium heat. Add the chicken thighs and cook for 5 minutes, then flip and cook for another five until cooked through. Once done, transfer to a plate and cover lightly.
  3. Add the butter to the pan. Once it melts, add brown sugar, apples, and shallots. Cook, stirring occasionally, until apples begin to soften. Pour in the spiced apple cider and stir occasionally for about 5 minutes. Add the chicken back to the pan and cook for 2 minutes.
  4. Remove from heat and spoon the apple mixture over the chicken to serve.
  5. Garnish with fresh thyme and enjoy!
