Bacon and Broccoli Salad
Bacon and Broccoli Salad

Ingredients
8 slices WF Thick cut bacon
1 bag, Taylor farm broccoli florets
½ cup red onion, diced
½ cup dried cranberries
½ cup pumpkin seeds, roasted and salted
¾ cup mayonnaise
3 tbsp apple cider vinegar
2 tbsp sugar
½ tsp salt
¼ tsp pepper
Directions
  1. Preheat oven to 400 degrees F.  Line a baking sheet with foil or parchment paper.

  2. Arrange your bacon slices on your baking sheet and bake in preheated oven for 12 to 15 minutes or until bacon is crispy (or until preferred level of crispness)

  3. When bacon is finished baking, allow to cool.  When cool enough to handle, cut up into small pieces.

  4. In a small bowl, mix mayo, vinegar, sugar, salt and pepper and whisk until smooth and creamy.  Set aside.

  5. Roughly cut up your broccoli florets and combine in a large serving bowl with onions, cranberries and pumpkin seeds.

  6. Pour dressing over the broccoli and toss it until evenly coated.

  7. Sprinkle bacon bits over the salad.

  8. Sprinkle with additional pumpkin seeds and cranberries.

  9. Enjoy!
