Capicollo, Roasted Pepper and Olive BBQ Pizza

Ingredients

  • 2 Bakery Brick Oven Pizza Crusts - thin
  • 2 tbsp (30 mL) extra virgin olive oil
  • 1/3 cup (80 mL) Western Family Organic Tomato Basil Pasta Sauce
  • 7 oz (200 g) Maple Leaf Natural Canadian Craft Montreal Capicollo
  • 8 slices of Western Family Pizza Mozzarella
  • 1/2 cup (125 mL) roasted, red peppers, drained and sliced
  • 1/2 cup (125 mL) black olives, sliced
  • 1/2 cup (125 mL) parmesan, finely grated

Directions

Directions

1. Preheat grill for 10–15 minutes on high heat.
2. If you have a gas grill, turn off one of the burners. If you use charcoal, push the charcoal to one side.
3. Brush the olive oil on each side of your pizza crust. Place the crust on the side of the grill with the burner turned off or without the charcoal.
4. Grill the crust 1 minute per side. Remove from grill. Add tomato sauce, capicollo, roasted peppers, olives, mozzarella and Parmesan and return to grill for 5 to 8 minutes or until the cheese is melted and the crust is golden.
5. Remove from heat, let cool for 2 minutes, and enjoy!

Hint:  For a different twist, you can also add mushrooms or substitute feta cheese for the mozzarella.
