Cheese Board with Pear Chutney

Ingredients

  • Cheese Board:
  • 1 Triple Cream Brie Cheese
  • 2 firmer cheeses (Applewood smoked Cheddar, Pacific Rock, Parmesan or Asiago)
  • 1 Blue or Gorgonzola cheese
  • 1 bunch grapes
  • 1/2 cup pecans or almonds
  • 1/2 cup dried fruit
  • Baguette or crackers for serving
  • Pear Chutney:
  • 2 tbsp (30 mL) butter
  • 1 shallot, minced
  • 2 ripe pears, peeled, cored and chopped
  • 1/3 cup (75 mL) raisins
  • 1/2 tsp (3 mL) fresh rosemary, chopped
  • 2 tbsp (30 mL) Weestern Family balsamic vinegar
  • 1 tsp (5 mL) sugar
  • 1/3 cup (75 mL) water

Directions

1. In a small saucepan, over medium heat, melt butter. Add shallots and sauté for 5 minutes.
2. Add pears, raisins and rosemary and sauté for another 3 minutes.
3. Add remaining ingredients and turn heat to low. Simmer for another 15 minutes.
4. In the meantime, assemble your cheese board.
5. Chill and serve the chutney with the cheese board.

Tip: This chutney also works well as a base for toasted cheese sandwiches.
