Ingredients
200g-300g Chicken Breast
Western Family 1 can Chicken Broth
Western Family 2 Tbsp Peanut Butter
1/4 cup Thai Red Curry paste
1 Tbsp Curry Powder mix
Western Familyca 1 tsp Turmeric
1 Can Coconut Milk
1 Tbsp Ginger-Garlic paste
3 Crimini Mushrooms
1/2 Red Bell Pepper
Handful of fresh Kale
1.5 Tbsp Fish Sauce
1 Packet Ramen Noodles
Lime (garnish)
Cilantro (garnish)
Green onion (garnish)
Directions
  1. Add chicken broth, coconut milk, sesame butter, red curry paste, curry powder mix, ginger garlic paste, chicken breast, and mushrooms to the Instant Pot. Cook on high pressure for 8-9 minutes. 
  2. Sliver the bell peppers and tear a few leaves of kale by hand. 
  3. When the Instant Pot is done, quickly release the pressure. Carefully remove the chicken, shred it, and toss it back into the pot, along with the noodles, bell peppers, and kale. 
  4. Stir swiftly to mix everything and cover the Instant Pot with its lid so that the steam and heat of the ramen soup will cook the noodles (about 5 minutes). 
  5. Ladle ramen into bowls and finish with a sprinkling of green onion slivers, cilantro, and a squeeze of fresh lime juice.
