Ingredients
1 cup Only Goodness Gluten Free Flour
¾ cup Almond Flour
½ tsp Only Goodness Baking Powder
Pinch of Salt
½ cup butter, melted and cooled slightly
¾ cup Only Goodness Coconut Sugar
1 egg
4 ounces Western Family Cream cheese
2 tablespoons cornstarch
2 tsp cinnamon
½ tsp nutmeg
½ cup Only Goodness Honey
3 cups sliced apples
1 cup fresh or frozen Western Family cranberries, thawed and chopped
2 oz Western Family Cream cheese
1/3 cup powdered sugar
Splash of vanilla
Splash of milk
Directions
  1. Line an 8x8” pan with parchment paper. Preheat oven to 350 degrees F (175°C).
  2. In a large bowl, combine 1 cup Only Goodness Gluten-Free Flour, ¾ cup Almond Flour, ½ tsp Only Goodness Baking Powder, Pinch of Salt, ½ cup melted butter, ¾ cup Only Goodness Coconut Sugar, and 1 egg. Mix well to form a crumbly mixture. Pour ¾ of the crust mixture into the prepared pan and press it flat to cover the bottom.
  3. In another large bowl, mix together 3 cups sliced apples, 1 cup chopped cranberries, ½ cup Only Goodness Honey, 2 tablespoons cornstarch, 2 tsp cinnamon, and ½ tsp nutmeg. Spread the cranberry apple mixture over the crust. Top the filling with chunks of 4 ounces cream cheese. Sprinkle the remaining crust mixture over the filling.
  4. Bake for 35 to 40 minutes or until the filling is bubbling, and the top has a golden brown color. Check the bars after the 15 to 20-minute mark, and if the top is browning too quickly, cover with aluminum foil and continue to bake until the filling is bubbling. Remove from the oven and allow to cool completely before slicing.
  5. In a small bowl, whisk 2 ounces Western Family Cream Cheese, 1/3 cup powdered sugar, and splash of vanilla together. Add a splash of milk to create a smooth flowing consistency.
  6. Drizzle the cream cheese glaze over the top of the cooled bars. Slice and enjoy your delicious cranberry apple bars with a creamy cream cheese glaze!
