Ingredients
1 container (400g) Western Family feta cheese, broken into chunks
3 tbsp Western Family olive oil
3 tbsp whipping cream
1 clove garlic
Zest and juice from ½ a lemon
3 tbsp minced parsley
¼ tsp black pepper
4 skinless salmon fillets
½” thick - Salt
1 bunch of slender asparagus stalks, trimmed
Directions
  1. Preheat the oven to 400°F. Place a piece of parchment paper on a baking tray.

  2.  Next, place the feta cheese, olive oil, cream, garlic, the zest and juice of a lemon, and parsley to a food processor. Blend until it looks like thick pesto. Add some black pepper and a little bit of salt (1/4 teaspoon).

  3. Now, take the salmon fillets. Sprinkle some salt on each side, then spread the cheese mixture over each fillet. Place some asparagus in the middle of each fillet and sprinkle it with a little more salt. Roll the salmon around it.

  4. Put these rolls onto your baking tray. Make sure the part of the roll where it meets (the seam) is at the bottom.

  5. Finally, bake your salmon for 13 minutes. Let it stand covered with foil for 5 minutes to finish cooking to flaky perfection as it rests.
