Creamy Italian Sausage & Veggie Soup

Ingredients
1 tbsp Extra Virgin Olive Oil
500g Italian Sausage, (mild or hot depending on your preferences), casings removed
1/4 cup Salted Butter
1 Yellow Onion, finely diced
2 ribs Celery, diced
3 Carrots, peeled and diced
3 Garlic Cloves, minced
5 Red Potatoes, peeled and large diced
6 cups Chicken Broth
1 bunch Kale, chopped
2 cups Heavy Whipping Cream
Salt & Pepper to taste
Shredded Parmesan Cheese to garnish
Directions
Direction:
- In a large pot, over medium-high heat, heat up olive oil and sauté Italian sausage until brown, breaking up sausage as it cooks. Using a spoon, transfer sausage to a plate and set aside. Drain grease.
- Add butter to pot, and sauté onions, carrots, and celery until softened and translucent.
- Add garlic and sauté for another minute.
- Pour in chicken broth and potatoes and allow to simmer over medium heat until potatoes are fork-tender (10 minutes or so).
- Pour in heavy cream, kale, and browned sausage and stir. Add salt and pepper to taste.
- Serve and garnish bowls with parmesan cheese.
