Ingredients
9 Yukon gold potatoes, thinly sliced with mandolin
4 tbsp Western Family Margarine with Olive Oil
4 tbsp flour Western Family All Purpose Flour
1 cup canned full fat coconut milk
1 cup almond milk
Pinch salt and pepper
Garnish with thyme
Directions
  1. Melt margarine in saucepan then add flour and stir over medium heat until combined. Pour in coconut milk and almond milk and bring to a low boil for about 10 minutes, stirring often. Remove from heat and stir in salt and pepper.
  2. Arrange potatoes upright in 9”x13” casserole dish. Pour sauce overtop of potatoes. Use a spatula to coat potatoes in-between each other.
  3. Bake at 350°F for 45 minutes, then broil for about 3-5 minutes.
  4. Remove from oven and let stand for 10 minutes. Garnish with fresh thyme.
