Ingredients
9 Yukon gold potatoes, thinly sliced with mandolin
4 tbsp Western Family Margarine with Olive Oil
4 tbsp flour Western Family All Purpose Flour
1 cup canned full fat coconut milk
1 cup almond milk
Pinch salt and pepper
Garnish with thyme
Directions
- Melt margarine in saucepan then add flour and stir over medium heat until combined. Pour in coconut milk and almond milk and bring to a low boil for about 10 minutes, stirring often. Remove from heat and stir in salt and pepper.
- Arrange potatoes upright in 9”x13” casserole dish. Pour sauce overtop of potatoes. Use a spatula to coat potatoes in-between each other.
- Bake at 350°F for 45 minutes, then broil for about 3-5 minutes.
- Remove from oven and let stand for 10 minutes. Garnish with fresh thyme.
