1. Using a vegetable peeler (or a mandoline slicer), slice your cucumber lengthwise to create long, thin cucumber ribbons. Set 8 aside, and add the rest to a drink pitcher.
2. Juice two limes (approx ¼ cup), and add to cucumber. Save lime rinds for garnish.
3. Remove 10-12 mint leaves from stems, add to cucumber and lime juice, and muddle well to combine flavours.
4. Add agave, and give mixture one more stir.
5. Using one of the remaining cucumber ribbons, wrap inside of drinking glass.
6. Add ice to glass, and using strainer, pour ¼ of mixture into glass.
7. Top with club soda.
8. Garnish with a sprig of lime, cucumber ribbon, and twist of lime.
9. Enjoy!
Tips and Substitutions:
- For a sweeter spritzer, increase the agave syrup or use ginger beer in place of club soda!
- To create cucumber ribbon garnish, fold cucumber ribbon back and forth and pierce with a toothpick or cocktail skewer.
- To create lime twist garnish, shave a long, thin strip of lime peel using a vegetable peeler, and wrap around a drinking straw to create a spiral.
