




1. Thaw the prawns and remove the shells, leaving the tail intact.
2. Rinse prawns under cold running water and then pat dry with a paper towel.
3. In a medium mixing bowl, add the prawns, cumin, paprika, sea salt and coriander seeds. Mix well and put aside.
4. Melt the butter in a frying pan over a high heat.
5. Add the prawns. Cook and turn over, adding the chopped garlic.
6. Fry the prawns, stirring frequently, for 3 – 5 minutes or until the prawns have turned pink.
7. Remove from the heat and set aside until ready to assemble.
8. Peel and cube the mangoes.
9. To assemble the skewers, place the prawn on the decorative skewer and then stick the skewers into the arranged mango cubes.
10. Sprinkle red chili flakes on top and decorate with a small herb garnish such as oregano if desired.
11. Serve on a platter and sprinkle more red chili flakes for presentation
