Directions

Ingredients:

  • 340 g cherry tomatoes on vine, halved
  • 1 medium yellow onion, sliced
  • 2 tbsp maple syrup
  • 8 oz feta cheese, crumbled
  • 3 oz cream cheese, softened
  • 1/4 cup + 3 tbsp extra virgin olive oil
  • Italian seasoning
  • Crushed red pepper flakes
  • Salt and pepper to taste

 

Directions:

  1. Preheat oven to 400°F.
  2. Add cherry tomatoes and onions to a lined baking sheet. Drizzle ¼ cup olive oil, maple syrup and season with Italian seasoning, salt and pepper.
  3. Roast for 40 minutes until softened and caramelized. Let cool.
  4. For the feta topping: add crumbled feta and cream cheese to a small bowl, drizzle 3 tbsp olive oil and blend in a food processor until smooth. Season with red pepper flakes, salt and pepper.
