Directions
Ingredients:
- 340 g cherry tomatoes on vine, halved
- 1 medium yellow onion, sliced
- 2 tbsp maple syrup
- 8 oz feta cheese, crumbled
- 3 oz cream cheese, softened
- 1/4 cup + 3 tbsp extra virgin olive oil
- Italian seasoning
- Crushed red pepper flakes
- Salt and pepper to taste
Directions:
- Preheat oven to 400°F.
- Add cherry tomatoes and onions to a lined baking sheet. Drizzle ¼ cup olive oil, maple syrup and season with Italian seasoning, salt and pepper.
- Roast for 40 minutes until softened and caramelized. Let cool.
- For the feta topping: add crumbled feta and cream cheese to a small bowl, drizzle 3 tbsp olive oil and blend in a food processor until smooth. Season with red pepper flakes, salt and pepper.
