Garlic Butter Steak with Prawns and Asparagus

Ingredients

  • 2 Striploin steaks
  • coarse salt
  • black pepper
  • 1 tbsp (15 mL) olive oil
  • 1 tbsp (15 mL) butter
  • 1 pound Western Family prawns, peeled
  • 3 garlic cloves minced
  • asparagus spears
  • 1/4 cup (50 mL) softened butter
  • 3 garlic cloves minced
  • 1 tsp of thyme chopped
  • 1 tsp oregano chopped

Directions

Make the garlic butter compound by mixing butter, garlic and herbs. Set aside.

Prepare asparagus by trimming the ends. Bring a large pot of water to boil.

Pat steaks dry with paper towel and season liberally with salt and pepper. In a large skillet, heat olive oil and butter over high heat. Add steaks and cook on each side for approx. 3 minutes or until outside is browned. Reduce heat to medium high and continue to cook the steaks to desired doneness. Remove and set aside on a plate and top with butter compound.

Reduce the skillet heat to medium. Add the prawns and garlic and cook for 2-3 minutes until opaque.

As prawns are cooking, add asparagus to the boiling water and cook until bright green and tender (1-3 minutes)

Plate prawns and asparagus together with the steak and enjoy!
