2 tbsp Western Family olive oil
Western Family Dried thyme or mixed herbs

Directions
  1. Prep: Pat pork chops dry for better sear.

  2. Marinade: Mix garlic, herbs, olive oil, salt, pepper, and optional spices. Add lemon juice or vinegar for brightness.

  3. Massage & Rest: Rub mixture onto pork chops. Let sit 30 minutes (or up to 4 hours in fridge) for deeper flavor.

  4. Cook Options: Grill: Preheat to medium-high. Grill chops 4–5 minutes per side, turning once, until internal temp reaches 145°F.

  5. Roast: Preheat oven to 425°F. Roast chops on a rack or sheet for 18–22 minutes, depending on thickness.

  6. Pan-Sear + Finish: Sear in a hot skillet with a splash of oil for 2–3 minutes per side, then finish in oven for 8–10 minutes.

  7. Rest: Let pork chops rest 5 minutes before serving to keep juices in
