Gingerbread Cake

Ingredients

  • 2 1/2 cups All Purpose Flour
  • 2 tsp (10 mL) Baking powder
  • 2 tsp (10 mL) Club House Ground Ginger
  • 1 tsp (5 mL) Club House Ground Cinnamon
  • 1 tsp (5 mL) Baking soda
  • 1/2 cup (125 mL) butter, softened
  • 1/2 cup (125 mL) Firmly packed brown sugar
  • 1 egg
  • 1 tsp (5 mL) Club House Pure Vanilla Extract
  • 1 cup (250 mL) Boiling water

Directions

Preheat oven to 350°F (180°C). Mix flour, baking powder, ginger, cinnamon and baking soda in a mium bowl. Set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until well blended and smooth. Add egg and vanilla; beat well. Add flour mixture alternately with boiling water, beating on low speed after each addition.

Spoon batter into greased 9-inch (23 cm) square baking pan.

Bake 40 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack 10 minutes. Invert cake onto wire rack; cool completely. Serve with whipped cream, if desired.
