Gluten Free Chocolate Cake

Ingredients

  • 3 cups Western Family All Purpose Gluten Free Flour
  • 2 cups sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp Western Family Xanthan Gum
  • 3/4 cup Western Family Pure Canola or Sunflower Oil
  • 2 tbsp Western Family White Vinegar
  • 2 tsp Western Family Vanilla Extract
  • 2 cups water

Directions

  1. Preheat oven to 350°F (180°C)
  2. Sift flour, sugar, cocoa powder, soda, salt and xanthan gum together into a 9×13 inch ungreased cake pan. Make three wells; pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all and stir well with a fork.
  3. Bake at 350°F (180°C) until a toothpick inserted comes out clean, about 30-40 minutes.
  4. Let cool then frost with your favourite gluten-free icing!

Please note: this recipe uses our Western Family All Purpose Gluten Free Flour. Using Western Family Gluten Free 1-To-1 Baking Flour may result in a poor end product because it already contains xanthan gum.
