1 lb fresh green beans, trimmed
1/3 cup dried cranberries
1/4 cup toasted pecans (or walnuts), roughly chopped
1/4 cup feta cheese, crumbled
1/4 small red onion, thinly sliced
2 tbsp fresh parsley, chopped (optional)
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp maple syrup (or honey)
1 garlic clove, minced
Salt & pepper to taste
1/4 cup pure maple syrup
1/4 cup cranberry sauce (store-bought or homemade)
1 tbsp Dijon mustard

Directions

Green Bean Salad with Cranberries

  1. Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 minutes, until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking. Drain again and pat dry.
  2. While the green beans cool, place the dried cranberries in a small bowl and cover with warm water for 5 minutes to plump them up. Drain and set aside.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup, minced garlic, salt, and pepper.
  4. In a large bowl, combine the blanched green beans, plumped cranberries, red onion, toasted pecans, and parsley.
  5. Drizzle the dressing over the salad and gently toss to combine. Sprinkle with crumbled feta on top.
