1 lb fresh green beans, trimmed
1/3 cup dried cranberries
1/4 cup toasted pecans (or walnuts), roughly chopped
1/4 cup feta cheese, crumbled
1/4 small red onion, thinly sliced
2 tbsp fresh parsley, chopped (optional)
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp maple syrup (or honey)
1 garlic clove, minced
Salt & pepper to taste
1/4 cup pure maple syrup
1/4 cup cranberry sauce (store-bought or homemade)
1 tbsp Dijon mustard

Directions
Green Bean Salad with Cranberries
- Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 minutes, until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking. Drain again and pat dry.
- While the green beans cool, place the dried cranberries in a small bowl and cover with warm water for 5 minutes to plump them up. Drain and set aside.
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup, minced garlic, salt, and pepper.
- In a large bowl, combine the blanched green beans, plumped cranberries, red onion, toasted pecans, and parsley.
- Drizzle the dressing over the salad and gently toss to combine. Sprinkle with crumbled feta on top.
- Allow the salad to chill in the fridge for at least 20 minutes before serving to let the flavors meld. Serve cold or at room temperature.
