


Grilled Chicken Breast with Cherry Balsamic Sauce

To a large bowl, add chicken breast, Greek yogurt, olive oil, lemon juice, garlic powder, salt and black pepper, mix to combine. Cover with plastic wrap and refrigerate for 30 minutes to allow chicken to marinate.

Once chicken has marinated, properly grease and heat a cast iron indoor grill pan. Cook chicken for about 6-8 minutes on each side or until chicken breast has reached an internal temperature of 165 degrees F. Remove from grill and set aside on a heated plate to rest.

Prepare the cherry balsamic sauce by cooking cherries over medium heat in a skillet. When water begins to lose from the cherries, add olive oil, balsamic vinegar, lemon juice, onions, dried thyme, lemon zest and honey, stir to combine.

Add cornstarch and mix. When sauce thickens, season with salt and black pepper to taste.

Add cooked chicken breast to the skillet with the cherry balsamic sauce and serve!
