Directions
Ingredients:
Salmon
- 3-4 6-8oz skin on salmon fillets
- 2 tbsp avocado oil
- 2 tsp sea salt
- 2 tsp pepper
- 1 lemon, cut into wedges
Pineapple Salsa
- 3 cups pineapple, diced
- 1 red bell pepper, chopped
- 1/2 cup red onion, chopped
- 1/4 cup cilantro, chopped
- 1/2 medium jalapeño, seeds and ribs removed, finely chopped
- Juice from 2 limes
- 1/4 tsp sea salt
Directions:
Salmon:
- Prepare the grill for high heat, 450F - 550F.
- Generously coat the flesh side of the salmon with avocado oil and season evenly with salt and pepper. Grill the salmon skin side down with the lid closed for about 6-8 minutes or until it becomes more firm to the touch and you can lift the fillets without sticking.
- Turn the salmon over, close the lid, and cook until its internal temperature reaches to 140-145F. Transfer to a platter to let it rest for 1-2 minutes. Serve with pineapple salsa and a wedge of lemon. Enjoy!

- In a medium serving bowl, stir in all ingredients.
- Season to taste with additional lime juice or salt.
- Let rest for 10 minutes or longer before serving.
- Top on grilled salmon.
