Healthy Peanut Butter Berry Muffins

Ingredients
1 cup Only Goodness overnight oats
2 cups of Milk
1 cup of Western Family Yogurt
1/4 cup Only Goodness chia seeds
1 cup Western Family all-purpose flour (or a mix of whole wheat and all-purpose flour)
1/2 cup Western Family Maple Syrup Amber
1 tsp Western Family baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup Western Family melted butter or oil
2 Western Family large eggs
1 tsp Western Family vanilla extract
1/2 cup Western Family peanut butter (smooth or crunchy)
1 cup of your favourite berries (For this recipe I am using a combination of blueberry, raspberries & black berries and strawberries & cranberries so ¼ of a cup of each berry to give you a variety)
Directions
Overnight Oats
- Pour your oats into a large reusable container.
- Add in the milk and yoghurt and stir until well combined.
- Place in the fridge overnight.
Muffins
- Preheat your oven to 375°F (190°C).
- Grease or line a muffin tin with paper liners.
- In a large bowl, combine the overnight oats, chia seeds, maple syrup, and peanut butter.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the oats mixture, stirring until just combined.
- In another bowl, whisk together the melted butter or oil, eggs, and vanilla extract. Add this mixture to the dry ingredients and mix until just combined. Do not overmix.
- Fold in your chosen mix-ins (berries, nuts, chocolate chips, etc.).
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
