Ingredients
2 lbs Western Canadian Lean ground beef
2 medium sized sweet potatoes
2 tbsp olive oil
2 avocadoes
1 Packet Western Family Taco Seasoning
2 cups Dairyland Cottage Cheese
½ cup western family honey
1 tablespoon hot sauce
2 tsps McCormick cayenne pepper
2 tsps McCormick smoked paprika
Pinch of salt and pepper

  • 2 lbs Western Canadian Lean ground beef
  • 2 medium-sized sweet potatoes, cubed
  • 2 tbsp olive oil
  • 2 avocadoes, sliced
  • 1 Packet Western Family Taco Seasoning
  • 2 cups Dairyland Cottage Cheese
  • ½ cup western family honey
  • 1 tablespoon hot sauce
  • 2 tsps McCormick cayenne pepper
  • 2 tsps McCormick smoked paprika
  • Pinch of salt and pepper

 

Direction

  1. Preheat oven to 400 degrees F. 
  2. To make your hot honey, in a small pan add your honey, hot sauce, cayenne pepper and paprika.  Mix to combine and cook over medium heat for a few minutes until bubbly.  Take off heat and set aside.
  3. Cube your sweet potatoes, drizzle with olive oil and season with salt, pepper and a dash of taco seasoning.
  4. Roast in the preheated oven until tender and crispy, about 10 to 15 minutes.
  5. While the sweet potatoes are roasting, heat a skillet on medium high and add olive oil.
  6. Once your olive oil is heated up, add your lean ground beef and cook until no longer pink.
  7. Add taco seasoning to ground beef and mix until fully incorporated and cook for a few more minutes.
  8. To assemble your bowl, add your sweet potatoes, ground beef, cottage cheese, top with sliced avocado and drizzle with hot honey.
  9. Enjoy!
