Ingredients
2 tbsp olive oil
1 lb lean ground beef
1 medium onion, chopped
1 bell pepper, seeded and chopped
2 cloves of garlic, minced
14 oz can diced tomatoes
1/2 cup canned coconut milk
1 tbsp oregano
1 tbsp thyme
Salt & pepper
1 small green cabbage, cored & chopped into strips
2 cups Armstrong cheddar cheese, grated
Green onion (optional)
Sour cream (optional)

Ingredients

  • 2 tbsp olive oil
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 bell pepper, seeded and chopped
  • 2 cloves of garlic, minced
  • 14 oz can diced tomatoes
  • 1/2 cup canned coconut milk
  • 1 tbsp oregano
  • 1 tbsp thyme
  • Salt & pepper, to taste
  • 1 small green cabbage, cored & chopped into strips
  • 2 cups Armstrong cheddar cheese, grated
  • Optional toppings: green onion, sour cream

Directions

  1. Sauté oil, beef, onion and bell pepper over medium high in a dutch oven. Cook until beef is browned and the onions are translucent. Add garlic and saute 1 more minute.
  2. Add in tomatoes, coconut milk, herbs, salt and pepper.
  3. Top with cabbage. Cover and cook for approximately 20 minutes, or until the cabbage is tender.
  4. Top with cheddar cheese, place under broiler to melt.
  5. Top with desired toppings.
  6. Serve and enjoy or pop in the fridge for a quick and delicious leftover meal.
