2 tbsp olive oil
1 lb lean ground beef
1 medium onion, chopped
1 bell pepper, seeded and chopped
2 cloves of garlic, minced
14 oz can diced tomatoes
1/2 cup canned coconut milk
1 tbsp oregano
1 tbsp thyme
Salt & pepper
1 small green cabbage, cored & chopped into strips
2 cups Armstrong cheddar cheese, grated
Green onion (optional)
Sour cream (optional)

- 2 tbsp olive oil
- 1 lb lean ground beef
- 1 medium onion, chopped
- 1 bell pepper, seeded and chopped
- 2 cloves of garlic, minced
- 14 oz can diced tomatoes
- 1/2 cup canned coconut milk
- 1 tbsp oregano
- 1 tbsp thyme
- Salt & pepper, to taste
- 1 small green cabbage, cored & chopped into strips
- 2 cups Armstrong cheddar cheese, grated
- Optional toppings: green onion, sour cream
Directions
- Sauté oil, beef, onion and bell pepper over medium high in a dutch oven. Cook until beef is browned and the onions are translucent. Add garlic and saute 1 more minute.
- Add in tomatoes, coconut milk, herbs, salt and pepper.
- Top with cabbage. Cover and cook for approximately 20 minutes, or until the cabbage is tender.
- Top with cheddar cheese, place under broiler to melt.
- Top with desired toppings.
- Serve and enjoy or pop in the fridge for a quick and delicious leftover meal.
