Ingredients
3 cups shredded leftover fully cooked turkey
2 cans of cream style corn, 15 ounces
2 cans sweet yellow whole kernel corn, 15 ounces
4 to 5 cups low sodium chicken broth
2 celery ribs, chopped
2 red bell peppers, diced
3 cups red potatoes, cubed OR golden potatoes
3 cups golden potatoes, cubed OR red potatoes
2 tsp Italian seasoning
1 tsp garlic powder
Salt and pepper to taste
Directions
  1. In a large stock pot, combine cream style corn, whole kernel corn, broth (start with 4 cups), celery, bell peppers, potatoes, seasoning and garlic powder.
  2. Cover and simmer over medium heat for 20 to 25 minutes, or until potatoes are fork tender.
  3. Stir in shredded turkey and season with salt and pepper. Add additional 1 cup of chicken broth if needed. When turkey is heated through, serve and garnish with fresh parsley.
  4. Enjoy.
