Mac & Cheese Dippers with Cranberry Balsamic Dip

Ingredients

  • 2-1/2 cups (625 mL) prepared macaroni and cheese, chilled for at least 4 hours
  • NOTE: if you are using a boxed macaroni and cheese add an extra 1 tbsp (15 mL) of butter and 1 cup (250 mL) of grated cheddar cheese
  • 1/3 cup (75 mL) Western Family Homestyle Premium Cranberry Spread
  • 2 tbsp (30 mL) Western Family Classics Balsamic Vinegar
  • 2 cups (125 g) Breton Original Crackers
  • 1/2 tsp (3 mL) kosher salt
  • 1 tsp (5 mL) paprika
  • 1/2 tsp (3 mL) chili powder
  • 1 tsp (5 mL) garlic powder
  • 2 large eggs
  • 3 tbsp (45 mL) milk
  • Canola oil for frying

Directions

1.    Using an ice cream scoop or your hands, roll the cold mac and cheese into 1.5-2 inch balls and place them onto a waxed paper-lined tray. Use your hands to mold the balls to ensure the mac and cheese holds together well. Freeze the balls for 4 hours or overnight.

2.    In a small bowl mix together the cranberry spread with the balsamic vinegar. Refrigerate.

3.    Pulse the Breton crackers in a food processor to make fine crumbs. Add the salt, paprika, chili and garlic powder and mix. Put the cracker crumbs mix into a shallow bowl.   In another shallow bowl, beat eggs and milk together to form an egg wash.

4.    Remove mac and cheese balls from the freezer. Dip the frozen balls into the egg wash then into the cracker crumbs. Place the balls back into the freezer until you are ready to fry.

5.    Heat the oil in a deep-fat fryer or in a medium saucepan to 350°F (180°C). Fry the mac and cheese balls until they are golden brown and center is hot, about 4 to 5 minutes each.

6.    Drain on paper towels.  Serve hot with the cranberry balsamic dip.

 

 

Tip: To make this into a one-dish meal, bake the mac and cheese with the cracker crumb mix as a topping. Once baked, drizzle with the cranberry balsamic sauce just before serving.
