Peppermint Bark

This is a a quick and easy treat you can make at home in just under 10 minutes! Make this peppermint bark festive by sprinkling crushed candy canes on top.

Ingredients
16 oz. white chocolate, chopped
4 drops food-grade peppermint oil
3/4 c. crushed candy canes or peppermint candies
1 bag of Western Family chocolate chips
Directions
  1. In a medium bowl and microwave for 30 second increments until melted. Stir until smooth.
  2. Spread the chocolate into a roughly 9″x 13″ rectangle on a piece of parchment paper. Place the chocolate in the fridge for 10 minutes to partially set.
  3. Line a baking sheet with a silicone baking mat or parchment paper. Place the white chocolate in a heatproof bowl. Set the bowl over a saucepan with a few inches of simmering water over low heat (do not let the bottom of the bowl touch the water). Gently melt the white chocolate, stirring occasionally, until only a few lumps remain, about 3 minutes. Remove from the heat and stir until completely smooth. Stir in the peppermint oil.
  4. Pour the white chocolate onto the lined baking sheet and smooth it into an even layer with an offset spatula. Sprinkle with the crushed candy. Let set at room temperature (if the room is cool) or in the refrigerator, 1 to 2 hours.
  5. Once the bark has completely hardened, break it into pieces.
