Ingredients
Western Family Salmon Nuggets Appetizer
½ cup Pomegranate Juice
Pomegranate seeds
Orange, juice and zest
¼ cup brown sugar
Salt and Pepper, to taste
Parsley, optional garnish
Directions
  1. Preheat your air fryer (or oven) to 350 degrees F (175°C). Place the Western Family Salmon Nuggets on a greased air fryer basket or on a parchment-lined baking tray.
  2. Air fry the salmon nuggets for 6 to 8 minutes on each side until they are golden and cooked through.
  3. In a small saucepan, combine ½ cup Pomegranate Juice, juice and zest from one Orange, ¼ cup brown sugar, a dash of salt, and pepper. Place the saucepan on medium heat and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and simmer for about 15 minutes until the glaze thickens and reduces.
  4. When the sauce has reduced and the salmon has finished cooking, place the cooked salmon nuggets into the pan of glaze and toss to coat evenly.
  5. Serve the glazed salmon nuggets hot on a platter as an appetizer, or over rice as a main dish. Sprinkle pomegranate seeds over the top to add a little crunch. Garnish with parsley, if desired.
