Pomegranate Orange Glazed Salmon Nuggets

½ cup Pomegranate Juice
Pomegranate seeds
Orange, juice and zest
¼ cup brown sugar
Salt and Pepper, to taste
Parsley, optional garnish
Directions
- Preheat your air fryer (or oven) to 350 degrees F (175°C). Place the Western Family Salmon Nuggets on a greased air fryer basket or on a parchment-lined baking tray.
- Air fry the salmon nuggets for 6 to 8 minutes on each side until they are golden and cooked through.
- In a small saucepan, combine ½ cup Pomegranate Juice, juice and zest from one Orange, ¼ cup brown sugar, a dash of salt, and pepper. Place the saucepan on medium heat and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and simmer for about 15 minutes until the glaze thickens and reduces.
- When the sauce has reduced and the salmon has finished cooking, place the cooked salmon nuggets into the pan of glaze and toss to coat evenly.
- Serve the glazed salmon nuggets hot on a platter as an appetizer, or over rice as a main dish. Sprinkle pomegranate seeds over the top to add a little crunch. Garnish with parsley, if desired.
