Pulled Pork Hoagies with Spicy Slaw

Ingredients

  • Kimchi Slaw:
  • 2 tbsp (30 mL) kimchi
  • 1/4 cup (60 mL) Coca-Cola
  • 2 tsp (10 mL) soy sauce
  • dash sesame oil
  • 1/4 cup (60 mL) mayonnaise
  • 2 tbsp (30 mL) cilantro, chopped
  • 3 cups (750 mL) coleslaw mix
  • Hoagies:
  • 1 package Western Family Fully Cooked BBQ Pork Back Ribs
  • 6 sausage (hoagie) buns, split

Directions

1.    Preheat the oven to 350°F (175°C). Place the Western Family Fully Cooked BBQ Pork Back Ribs in the oven and bake for 20 minutes.  Remove from the oven and cool until you can pull the meat off the bones.  Set aside.

2.    Meanwhile, as the ribs are cooking, make the kimchi slaw.  In a blender, combine kimchi, Coca-Cola, soy sauce and sesame oil.  Puree until well blended.  Place the mayonnaise in a bowl and whisk in the kimchi puree. Stir in the cilantro and the coleslaw.

3.    To assemble the hoagies, toast the buns in the oven under the broiler for a couple minutes.  Divide the rib meat on top of one side of the toasted bun and top with the kimchi slaw. Assemble and serve.

 

Tip: Enjoy the kimchi slaw on its own as a great side.
