Pumpkin Curry

Ingredients
1 tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, minced
3 tbsp tomato paste
1 tsp garam masala
½ tsp paprika
½ tsp ground cumin
½ tsp chili powder
¼ tsp curry powder
Cooked white rice, for serving
Directions
- Preheat oven to 425°F.
- Spread pumpkin cubes on a baking sheet, drizzle with a little olive oil, and roast for 25–30 minutes, or until tender and lightly caramelized. Set aside.
- In a large skillet, heat 1 tbsp olive oil over medium heat. Add onion and sauté until soft, about 5–7 minutes.
- Stir in garlic and ginger. Cook for 1–2 minutes until fragrant.
- Add tomato paste, garam masala, paprika, cumin, chili powder, and curry powder. Stir and cook for 2–3 minutes until the spices are deeply aromatic.
- Add the roasted pumpkin cubes to the skillet, gently stirring to coat in the spiced mixture.
- Season with salt and pepper to taste. Simmer on low heat for another 5–10 minutes, adding a splash of water if needed for consistency.
- Serve warm over fluffy white rice, and enjoy!
