Ingredients
1 tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, minced
3 tbsp tomato paste
1 tsp garam masala
½ tsp paprika
½ tsp ground cumin
½ tsp chili powder
¼ tsp curry powder
Cooked white rice, for serving
Directions
  1. Preheat oven to 425°F.

  2. Spread pumpkin cubes on a baking sheet, drizzle with a little olive oil, and roast for 25–30 minutes, or until tender and lightly caramelized. Set aside.

  3. In a large skillet, heat 1 tbsp olive oil over medium heat. Add onion and sauté until soft, about 5–7 minutes.

  4. Stir in garlic and ginger. Cook for 1–2 minutes until fragrant.

  5. Add tomato paste, garam masala, paprika, cumin, chili powder, and curry powder. Stir and cook for 2–3 minutes until the spices are deeply aromatic.

  6. Add the roasted pumpkin cubes to the skillet, gently stirring to coat in the spiced mixture.

  7. Season with salt and pepper to taste. Simmer on low heat for another 5–10 minutes, adding a splash of water if needed for consistency.

  8. Serve warm over fluffy white rice, and enjoy!
