Pumpkin Pasta

Ingredients
12oz pasta
1/3 cup cashews
1 tbsp olive oil
1/2 cup diced onion
2 cloves garlic, minced
1 cup pumpkin purée
1 cup vegetable broth
2 tbsp nutritional yeast
1/4 tsp paprika
Salt/pepper
Directions
- Soak cashews in hot water 15min. Then drain and continue on with recipe
- Cook pasta according to package instructions
- Heat a saucepan over medium with olive oil. Add garlic and sauté until fragrant. Then add in onions and cook till lightly golden. Remove from heat and stir in pumpkin purée
- Add all ingredients to a blender and blend on high until smooth(about 1 min)
- Pour sauce over cooked pasta in saucepan over low heat. Toss till combined/heated through. Top with fresh cilantro + shredded cheese and enjoy!
Substitutes: you can use any type of pasta you’d like!
