Rice Krispies® Footballs

Ingredients

  • Footballs:
  • 1/4 cup (60 mL) Western Family Unsalted Butter
  • 4 cups (1 L) Western Family Mini Marshmallows
  • 1/3 cup (75 mL) cocoa powder
  • 1 tsp (5 mL) Western Family Pure Vanilla Extract
  • 5 cups (1.25 L) Kellogg’s® Rice Krispies® cereal
  • Icing:
  • 1/4 cup (60 mL) Western Family Cream Cheese, softened
  • 1 tbsp (15 mL) Western Family Butter, softened
  • 1/4 tsp (1 mL) Western Family Pure Vanilla Extract
  • 1 cup (250 mL) icing sugar

Directions

  1. Footballs: Melt butter in a Dutch oven or large heavy-bottomed saucepan set over medium-low heat. Add marshmallows and cocoa; stir until melted. Remove from heat. Add vanilla and cereal and stir until well coated; cool slightly.
  2. With buttered hands, shape into 16 footballs, about 1-1/2 x 3-inch (4 x 7.5 cm) (about 1/3 cup each).
  3. Icing: Using electric beaters, beat cream cheese with butter and vanilla until light and fluffy. Beat in icing sugar until smooth. Scrape into a small re-sealable plastic bag; snip corner.
  4. Pipe icing to resemble stripes and laces on each football.

Tips

  1. For lunchbox treats, press warm cereal mixture into a greased 9 x 13-inch (3 L) baking dish. Let cool and cut into squares. 
  2. For a gluten-free option use Kellogg’s Rice Krispies® Brown Rice Gluten-Free cereal. 
  3. Serve any extra icing in a small bowl for dipping.
