Ingredients
1 butternut squash, peeled and cut into cubes⁠⁠
1 tbsp olive oil⁠⁠
1/2 tbsp maple syrup⁠⁠
1 tsp cinnamon⁠⁠
1 tsp salt⁠⁠
1 1/2 cups dry quinoa (cooked in vegetable broth)⁠⁠
1 cup kale, chopped⁠⁠
1/4 cup olive oil⁠⁠
2 tbsp maple syrup⁠⁠
1 tbsp apple cider vinegar
1 tbsp dijon mustard⁠⁠
1 garlic clove, minced⁠⁠
1 tsp salt⁠⁠
Pinch of black pepper⁠⁠
Dried cranberries
Pumpkin seeds
Feta cheese
Thyme
Directions
  1. Preheat the oven to 400 degrees F.⁠⁠
  2. Cook quinoa according to the package in vegetable broth (instead of water). Set aside and let cool.⁠⁠
  3. Toss butternut squash, olive oil, maple syrup, cinnamon and salt in a bowl. Arrange butternut squash in an even layer on a baking sheet. Roast in the oven for 35 minutes.⁠⁠
  4. Whisk dressing ingredients together in a small bowl.⁠⁠
  5. Toss cooled quinoa, kale and dressing together. Taste and add more salt/pepper if desired.⁠⁠
  6. Top salad with roasted butternut squash and additional toppings.⁠⁠
