


Salmon Packets
Recreate this simple and nutritious salmon packet for your next camping trip! Add potatos, green beans, lemon and dill for extra texture and flavour.

1 package Western Family wild sockeye salmon portions
1 bag green beans, fresh or frozen
1 Western Family trio mini creamer potatoes, thinly sliced
2 tbsp olive oil
1 lemon, cut into slices.
1 package Western Family fresh dill
Salt & Pepper, to taste
Directions
- Fold one long piece of tinfoil in half to create a sturdy square of foil.
- Layer 1/4 of your potatoes into center of foil. drizzle with 1 tsp olive oil and season with salt and pepper.
- Add one portion of salmon and a handful of green beans, add a touch more oil, salt and pepper.
- Add 1-2 slices of fresh lemon and a sprig of fresh dill.
- Secure packet by folding tinfoil over lengthwise and tightly sealing the sides.
- Repeat for remaining portions.
- Bake in bbq or over the fire for 20 minutes or until fish flakes easily with a fork.
*Carefully open packet away from yourself to avoid steam - Eat straight out of the foil packets, give the table a wipe, and make the most of your evening!
