Ingredients
2 tbsp olive oil
1 medium onion, diced
4 garlic cloves, minced
1 lb sausage, removed from casing
Salt and pepper, to taste
2 tbsp tomato paste
1 can (14 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 cup beef broth
2 tbsp Italian seasoning
1 1/2 cups uncooked macaroni
Directions

Instructions:

  1. Cook the Sausage:
    • Heat olive oil in a large pot or Dutch oven over medium heat.
    • Add the sausage and cook, breaking it apart with a spoon, until browned.
    • Remove excess fat if needed.
  2. Sauté Aromatics:
    • Add the diced onion and garlic to the pot with the sausage.
    • Sauté until softened, about 3-4 minutes.
  3. Add Tomato Paste & Liquids:
    • Stir in the tomato paste and cook for 1 minute.
    • Add the diced tomatoes, tomato sauce, beef broth, and Italian seasoning.
    • Season with salt and pepper to taste.
  4. Simmer:
    • Bring the mixture to a gentle boil, then reduce the heat to low.
    • Simmer for 10 minutes to allow the flavors to meld together.
  5. Cook the Macaroni:
    • Stir in the uncooked macaroni and let it cook in the sauce for 10-12 minutes, stirring occasionally, until the pasta is tender.
  6. Serve:
    • Ladle into bowls and serve warm.
