Sheet Pan Cheesy Chicken

Ingredients
1 family pack boneless, skinless chicken thighs
3 tbsp olive oil, divided
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp paprika
1 lb russet potatoes, halved
2 cup broccoli florets
Salt & Pepper, to taste
1/3 cup Western Family shredded parmesan cheese
Directions
- Preheat oven to 425F
- Combine garlic powder, oregano and paprika
- Add potatoes and chicken thighs to separate bowls. Divide 2 tbsp olive oil and seasonings between each and toss until evenly coated
- Spread chicken and potatoes across a large baking sheet and cook 10mins
- Toss broccoli with 1 tbsp olive oil, salt and pepper. Flip chicken and then add broccoli to baking sheet. Bake everything for an additional 20-25 mins until chicken is done and potatoes are tender
- When 5 mins are left, sprinkle shredded cheese over entire pan and return to oven
- Remove from oven, let cool and divide into meal prep containers.
