2 lbs boneless, skinless chicken breast, cut into cubes
1 cup CattleBoyZ Original BBQ Sauce (divided)
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp lemon juice
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 medium red onion, cut into wedges
1 zucchini, sliced

  • 2 lbs boneless, skinless chicken breast, cut into cubes
  • 1 cup CattleBoyZ Original BBQ Sauce (divided)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 medium red onion, cut into wedges
  • 1 zucchini, sliced (Any of your favourite veggies will work!)

Directions

  1. In a bowl, mix ½ cup BBQ sauce, olive oil, garlic, lemon juice, smoked paprika, salt, and pepper.

  2. Add chicken and toss to coat. Cover and marinate for at least 30 minutes in the refrigerator.

  3. Preheat grill to medium-high heat.

  4. Thread chicken and vegetables onto skewers, alternating pieces.

  5. Grill for 10–12 minutes, turning occasionally.

  6. Brush with remaining BBQ sauce during the last 3–5 minutes of cooking.

  7. Ensure chicken reaches an internal temperature of 165°F (74°C).

  8. Remove from grill and let rest for a few minutes before serving.
