This savoury and sweet tofu poke bowl is a great plant-based lunch option that will keep you fueled for the rest of the day with the help of avocados and tofu!

Sticky Maple Tofu Poke Bowl

1 cup of rice, cooked
1 block of tofu, cubed
4 tbsp of soy sauce
2 tbsp of rice vinegar
2 tbsp of maple syrup
Toasted sesame seeds for garnish
Cucumber
Grated carrots
Green onions

Directions
- Cook your rice according to the package directions.
- Pat dry your tofu with paper towel and cut into cubes.
- Add the cubed tofu into a large bowl along with the soy sauce, rice vinegar and maple syrup. Toss to combine.
- Transfer to a pan and simmer on medium heat for about 5 minutes or until the sauce thickens and is sticky enough to coat the tofu.
- Once the tofu is ready, add a few spoonfuls of cooked rice to a bowl and top with the veggies of your choice and the tofu.
- Garnish with some green onion and toasted sesame seeds and serve!
