Strawberry Chicken Mango & Cucumber Salad

Ingredients

  • 300 g strawberry marinated chicken breast
  • 1/3 cup (75 mL) rice wine vinegar
  • 3 tbsp (45 mL) Western Family olive oil
  • 1 tbsp (15 mL) granulated sugar
  • 2 tsp (10 mL) fresh mint leaves, coarsely chopped
  • 1/4 tsp (2 mL) salt
  • 1/4 tsp (2 mL) pepper
  • 2 cups (500 mL) strawberries, sliced
  • 1 medium cucumber cut into cubes
  • 1 large mango cut into cubes
  • 8 cups (2L) mixed greens

Directions

  1. In a large bowl, place mixed torn greens. Top with chicken, strawberries, mango and cucumber.
  2. In a small bowl, whisk together vinegar, oil, sugar, mint and salt and pepper. Just before serving, pour over salad and toss gently.

TIP: To make this salad a balanced main meal, top with grilled chicken, almonds or chickpeas.
