Strawberry, Mango + Cucumber Salad

Ingredients

  • 1/3 cup (75 mL) rice wine vinegar
  • 3 tbsp (45 mL) Western Family olive oil
  • 1 tbsp (15 mL) granulated sugar
  • 1 1/2 tsp (8 mL) fresh mint leaves, coarsely chopped
  • 1/4 tsp (2 mL) each salt and pepper
  • 2 cups (500 mL) strawberries, sliced
  • 1 medium English cucumber, cut into 1/4
  • 1 large mango, peeled and cut into 1/4
  • 8 cups mixed torn greens

Directions

In a large bowl, place mixed torn greens. Top with berries, mango and cucumber.

In a small bowl, whisk together vinegar, oil, sugar, mint and salt and pepper. Just before serving, pour over salad and toss gently.

to make this salad a balanced main meal, top with grilled chicken, almonds or chickpeas.
