Sweet Potato Toast - 3 Ways

banana
almond butter
sliced almonds

salt and pepper

Directions
Sweet Potato Toast
Ingredients:
- 1 large sweet potato
Directions:
- Preheat oven to 400 degrees
- Slice sweet potato into ¼-½ inch slices
- Arrange on parchment covered baking sheet and bake for 30 minutes
- Remove from oven and allow to cool slightly
VARIETY 1 – Banana Almond
Ingredients:
- 1 banana, sliced in ¼ inch rounds
- almond butter
- sliced almonds
Directions:
- Spread almond butter generously across toast
- Arrange bananas to cover almond butter
- Sprinkle with sliced almonds
- Enjoy!
VARIETY 2 – Egg, Spinach and Avocado
Ingredients:
- 1 egg, hard or medium boiled, peeled and sliced into ¼ inch rounds
- fresh spinach
- half avocado, sliced in ¼ inch segments
- salt and pepper
Directions:
- Arrange avocado segments across toast
- Add a handful of fresh spinach to avocado layer
- Top with egg slices
- Add salt and pepper to taste
- Enjoy!
VARIETY 3 – Blueberry Yogurt
Ingredients:
- fresh blueberries
- plain greek yogurt
- hemp hearts
- honey
Directions:
- Spread yogurt generously across toast
- Arrange blueberries to cover yogurt
- Sprinkle with hemp hearts to taste
- Drizzle with honey
