Turkey Bubble and Squeak

Ingredients

  • 3 oz. (85g) bacon, diced
  • 1/2 yellow onion, diced
  • 1/2 tsp (3 mL) salt
  • 2 cups (500 mL) leftover Brussel sprouts, carrots or other vegetables
  • 2 cups (500 mL) leftover mashed potatoes
  • 1 large egg, whisked
  • 2 cups (500 mL) leftover turkey, chopped
  • leftover cranberry sauce for serving

Directions

 Directions

1. In a medium cast iron skillet, over medium heat cook bacon for 5 minutes until it starts to crisp.  Add onions, salt and cook for another 5 minutes.  Add leftover vegetables and cook for another 3 minutes.

2. While bacon and vegetables are cooking, mix together leftover mashed potatoes with egg.
3. Add mashed potato mixture and push it down to from a pancake.  Fry for 10 to 12 minutes, until a nice browned bottom forms.  Invert onto a serving plate and cut into slices.  Serve with leftover cranberry sauce.
Tip: Serve with a side garden salad for a complete, refreshing meal.
