  • 1 large watermelon
  • 2 small watermelons, for serving

 

Directions

  1. Using a large sharp knife, halve watermelon. Use the knife to slice off the rind. Alternatively, use a large ice cream scoop to scoop out the flesh.
  2. Transfer 1/2 of the watermelon to a blender and blitz until smooth. Pour juice into a jar with a lid and refrigerate.
  3. With the remaining 1/2 of watermelon, transfer to a container and freeze until firm.
  4. To make the slush, transfer frozen watermelon chunks and juice to a blender. Measuring is fine, but you can eyeball and adjust to your liking. Blitz the frozen watermelon and juice until smooth. If slush is too thick, add more of the watermelon juice.
  5. Serve in your favourite glasses or hollowed out small watermelons. Top with additional toppings of your choice like additional watermelon cubes, other fruits, or boba pearls. Enjoy right away.
